Tandoori chicken on grill

  • Prep time: 15 minutes
  • Cook time: 40 minutes
  • Marinating time: 6 hours
  • Yield: Serves 4-6
  • If you don't have a grill, you can broil the chicken for a few minutes on each side to get some browning, then finish in a 325°F oven until done.

    INGREDIENTS

    • 3 Tbsp vegetable oil
    • 1 teaspoon ground coriander
    • 1 teaspoon ground cumin
    • 1 teaspoon ground turmeric
    • 1 teaspoon cayenne
    • 1 Tbsp garam masala
    • 1 Tbsp sweet (not hot) paprika
    • 1 cup plain yogurt (can sub buttermilk)
    • 2 Tbsp lemon juice
    • 4 minced garlic cloves
    • 2 Tbsp minced fresh ginger
    • 1 teaspoon salt
    • 4 whole chicken legs (drumsticks and thighs), or its equivalent, skinless, bone-in

    METHOD

1 Heat the spices in oil: Heat the oil in a small pan over medium heat, then cook the coriander, cumin, turmeric, cayenne, garam masala and paprika, stirring often, until fragrant (approximately 2-3 minutes). Let cool completely.
2 Whisk spices into yogurt, add lemon juice, garlic, salt, ginger: Whisk the cooled spice-oil mixture into the yogurt, then mix in the lemon juice, garlic, salt and ginger.
3 Cut deep slashes into chicken, coat with marinade, chill: Cut deep slashes (to the bone) in 3-4 places on the leg/thigh pieces. Just make 2-3 cuts if you are using separate drumsticks and thighs. Coat the chicken in the marinade, cover and chill for at least an hour (preferably 6 hours), no more than 8 hours.
4 Prepare grill: Prepare your grill so that one side is quite hot over direct heat, the other side cooler, not over direct heat. If using charcoal, leave one side of the grill without coals, so you have a hot side and a cooler side. If you are using a gas grill, just turn on one-half of the burners.
Use tongs to wipe the grill grates with a paper towel soaked in vegetable oil.
5 Shake off excess marinade, place chicken on hot side of grill: Take the chicken out of the marinade and shake off the excess. You want the chicken coated, but not gloppy.
Put the chicken pieces on the hot side of the grill and cover. Cook 2-3 minutes before checking.
Turn the chicken so it is brown (even a little bit charred) on all sides
6 Move to cool side of grill, cover and cook: Move chicken to the cool side of the grill. Cover and cook for at least 20 minutes, up to 40 minutes (or longer) depending on the size of the chicken and the temperature of the grill. The chicken is done when its juices run clear.

Let it rest for at least 5 minutes before serving. It’s also great at room temperature or even cold the next day.

    Vegetable skewers on grill

    6 short skewers
1⁄2 cup extra light olive oil
    2-3 fresh garlic cloves,
    minced salt pepper
    1-2 tablespoon parmesan cheese
1 vine ripe tomatoes, cored and seeded
1⁄2 small green pepper, cored and seeded
    1⁄2 small white onion
    1 small zucchini
    6-7 porta bella mushrooms

Mix olive oil, garlic, salt, and pepper in a medium sized bowl; let set for about an hour to let all flavors blend. Cut all vegetables into bite size pieces. Toss veggies in the olive oil/garlic mix and coat evenly.

Slide veggie's onto skewers one by one leaving a small space in between each - group onions to lessen chance of burning. Add additional salt and pepper if desired, and then sprinkle with Parmesan cheese, turning skewers to ensure even coating. Place on top rack over medium flame in a preheated grill.

Cook for about 15 to 20 minutes turning occasionally to prevent charring. Remove from grill when veggies start to brown and become tender. Sprinkle with additional Parmesan cheese if desired, and serve. Serves 2 to 4.

    Burden dropped !!

Today I was fully busy seeking a new flat for myself. I went to a close by hotel and was waiting for the broker to come as we had already discussed about my requirements and the meeting point. I was hoping that at least this one will show me something good because prior to that I had been trying with few other brokers but nobody was able to actually show me even close to my expectations. Which was really frustrating and annoying.

It must be 3 pm in the afternoon and I was sitting on my standstill motor bike. I was kind of frustrated after waiting for 15 minutes for that broker guy to show up. In between these 15 minutes I called him up twice on his cell phone but every time the response I got was him on the way to meet me up and he is gone take another 2 minutes to reach.

I was waiting in front of this darshini(small hotel) and I observed a good amount of rush. In Bangalore one can see these darshinis every here and there, which sometimes make me wonder if people have stopped preparing food at home :)

I was really getting bored so I called up one of my friend staying close by. While I was busy in chitchatting with her an old man came from nowhere to me. He looked old, dark and pale. He tried to tell me something in kannada(probably). I just ignored him continuing with my chitchat.

Now he realized that I really didnt get what he really trying to convey me, so he started to explain me in his broken hindi. He told me that he didnt get any work from morning and was very hungry. While I still continued with the ongoing chitchat I also looked at him to try to see if he really was a needful person. He asked me 10 rs to buy chapatis from darshini. For a moment I though that he might be like any other beggar who would just ask for money telling some or other problems. This was the time when I decided to ignore him but then something clicked my mind. Those words "I didnt get any work since morning" and I decided to help him. My initial thoughts were still striking my mind again and again saying he may be a lier and given 10rs to him he would go to the next person telling the same needs and asking for more money. But what if he was telling the truth and If was really very hungry. I really believe and try to follow the parable which says help only the truly deserving. So I finally decided to help him but not in his way but in my decided way.

I went to the counter of darshini and asked for chapati-sabji which cost me 24rs. I took the coupon and gave it to him and pretended like if I was done. After a couple of minutes he had his order in his plate. He sat nicely on one of the tables and started having it. I was still waiting for the broker to turn up and had a look at the old man. He looked to be busy with his food.

I though one can probably never decide if a person is genuinely needy or not but I am sure that everyone must try to follow the parable I stated above. I could have given him 10rs and would have felt cheated or I could have said no to him and carried a burden with me. But I added few more bucks to the amount he asked for and dropped possibility of the burden of either cases which I would have been if done otherwise.
